Garlic Turkey Sweet Potato Sliders

1 Large, Wide Sweet Potato
1 Lb Whole Foods Ground Turkey
2 tbsp Organic Butter
6 Cloves Garlic, peeled
7 Leaves Lacinato Kale (aka Dinosaur Kale)
2 Tbsp 365 Mayonnaise
1 Tbsp Sky Valley Sriracha
1 Tbsp sesame seeds
MAKE THE MAGIC HAPPEN:
Use the center of a wide sweet potato.
Cut sweet potato at the center into 3 wide, 1/2 inch thick slices
Heat frying pan with 1 tbsp of butter
Add the sweet potatoes and 1/2 cup of water.
Cover and let cook through, until lightly crisped.
Meanwhile, make turkey into 3 patties
Heat frying pan with 1 tbsp butter + 6 cloves of whole garlic until fragrant
Add the turkey, salt lightly, cook covered for 3 minutes.
Flip and cook for 4 minutes until looked through.
Set aside, leave the glazed pan for kale.
Chop Lacianto kale into ribbons, massage with your hands until softened
When turkey patties are finished, toss kale in the garlic turkey glaze in the pan.
Mix 2 tbsp mayonnaise with 1 tbsp of Sriracha. Set aside.
PUT IT ALL TOGETHER
Plate the sweet potatoes, top with a turkey patty, a handful of kale, a drizzle of sriracha mayo, and an optional pinch of sesame seeds. Serve warm.
