Summer Gnocchi with Brown Butter Swordfish

SUMMER GNOCCHI with BROWN BUTTER SWORDFISH
Serves 2 & only takes 15 minutes to make.... so essentially, this is the perfect meal! All ingredients can be found at Whole Foods Market 
 

 


SWORD FISH

You will need:

  • 1 lb of Whole Foods Wild Caught Swordfish

  • 2 tbsp Kerrygold Butter

  • 1 tsp Real Salt

 

GET TO IT

  • HEAT frying pan or cast iron pan on high heat. Add 1 tbsp of butter and let brown for 30 seconds. Add fish to the buttered pan and salt lightly. Add other 1 tbsp of butter as well.

  • COVER and let cook for 3 to 4 minutes until fish has started to cook through. You should see the translucence start to look opaque white.

  • FLIP fish and let cook for 2 to 3 minutes. Turn heat off and remove fish from the pan and let it sit until ready to serve. When fish is finished it will be a flaky white all the way through.
     

GNOCCHI

You will need:

  • 1 Package of Pappardelle’s Gluten Free Gnocchi

  • ½ tbsp of Kerrygold Butter or extra virgin olive oil

  • .25 lbs Black Creek Cheddar 3 year aged cheddar

  • 1 pint Heirloom Cherry Tomatoes; sliced in half

  • ½ cup Mango; cut into small cubes

  • 5 slices Vincenza’s Soppressata; sliced into thin strips

  • Black pepper; freshly ground 

 

 

GET TO IT

  • BRING 2 cups of water to a rapid boil in a small saucepot. Then, add gnocchi and cook for 4 to 6 minutes (mine only cooked for 4 as I don’t like them too soft). .

  • MEANWHILE, shave chedder into a small bowl and set aside. Then, halve tomatoes, chop mango, slice soppressata, and set them aside.

  • GNOCCHI will finish cooking quickly; drain the water and add ½ tbsp butter; mix gently to ensure gnocchi doesn’t stick together.

  • WHEN gnocchi is drained and lightly coated in butter, turn the heat to very low, and add the grated cheddar, soppressata, and black pepper. Mix gently, cover, and let cheese melt for about 1-2 minutes over low or no heat.

  • ONCE cheese has melted, plate the gnocchi and top with tomatoes, mango, and an extra hit of black pepper. 

SERVE:

Plate gnocchi and fish together. Serve with a wedge of lemon and enjoy some of the last flavors of summer with your favorite person.
