Stuffed Delicata Squash Recipe with Variations

This is one of my all-time favorite ways to cook Delicata squash. Perfect for tripling the recipe and having leftovers. Tastes good, filling, and wintery. See delicate squash stuffing options below in the table.

You'll Need:

1. 1 medium delicata squash 2. Grain, Meat, Veggie, Spice, Nuts, and Cheese based on the table below

How To:

Preheat your oven to 400 degrees. Cut the squash in half lengthwise and scrape out the seeds.

Rub the skin and flesh of the squash with 1/2 tablespoon of olive oil or melted butter. Sprinkle the inside with a little salt and pepper.

Lay the squash face side down onto the baking sheet and bake for 20-25 minutes or until tender.

Meanwhile, heat the remaining tablespoon of butter over medium heat in a large frying pan.

Using the guide below you can stuff your delicata squash in whatever way you like.

Add the vegetables and dried spices and sauté until the greens are wilted and the onions glassy. Add the protein of choice, either pre-cooked on cook with vegetables.

Toss in the nuts, protein, and cooked grain and mix well. Continue to sauté for about 2 to 5 more minutes until heated through. Season to taste with salt and pepper.

Spoon the mixture into the roasted delicata squash and top evenly with your cheese of choice.

Return the stuffed squash to the oven and continue to bake for an additional 10 minutes or until the cheese is melted and the top slightly browned. Serve as a main or cut in half for a side.
