CocoN'Oatmeal aka Coconut Flour “Oat"meal

 

Perfect, grain-free, low carb, high-fiber, and ultra filling oatmeal alternative for cold fall mornings. Below are the on-the-go version and the traditional, slightly more involved version. Add your favorite nut butter, fruit, seeds, and other toppings. 

On The Go Version

 

You Will Need:

- 1/4 cup raw, organic coconut flour 

- 1 tsp Trivia (stevia)

- 0.75 to 1 cup of hot water 

- 1 tbsp cashew butter

Spices: pinch of cinnamon, cardamom, and/or cacao powder 

 

 

How To: In a bowl mix coconut flour, stevia, and desired spices. Add hot water 1/2 cup at a time, mixing as you add the water. The coconut flour requires a lot of water, but to avoid making your “oat”meal too watery taste it as you go. I like mine on the drier, less soupy side. Add cashew beer

 

Traditional Version
 

You Will Need:

- 1/4 cup coconut flour

- 3/4 cup water

- 1/4 cup coconut cream 

- 1 egg, 

- 1tsp stevia or other sweetener

- 1/2 tsp organic vanilla extract

- Fruit, nuts, and nut butters for topping

Spices: cinnamon, cardamom and/or cacao powder for spicing

 

How To:

In a small sauce pan mix coconut flour, water and cream over medium heat until there are no clumps of flour. Add the egg. Immediately mix so the egg doesn’t cook. Continuously stir the mixture while you add vanilla extract, stevia and any desired spices.

 

Top with coconut manna, coconut flakes, cacao nibs, peanut butter, almond butter, cashew or pecan butter, dried bananas, or a combination of what sounds best to you
